Holmus Aquavit, BATCH 3
This aquavit is a tribute to the classic on the Danish lunch table and the nature of Bornholm, which for decades preserved a few specimens of the special Bornholm caraway.
In oblivion, it resided by a woodpile in Østerlars until nature guide Thomas Guldbæk rediscovered it as part of the "Bornholm Herbs" project at Gaarden - Bornholm's Food Culture House.
Thomas took seeds from the plants, which have since been propagated at Krogsholm Fruit Plantation near Rø Plantation by Henrik and Brith Messerschmidt.
Sown, cultivated, harvested, and threshed by hand. This very special caraway distinguishes itself by its mild yet aromatic scent and flavor, with clear notes of mint and marjoram.
Caraway is first and foremost on the ingredient list so you can experience the full potential of this new classic local botanical.
