How Kadeau Gin came about

This collaboration between Kadeau and Bornholm Distillery has been under way for some time. We started in autumn 2020, and this past winter we had ongoing discussions about which botanicals and herbs to use and where to harvest them. For both Kadeau and Bornholm Distillery, it was essential that nearly all the ingredients were from Bornholm. They should either be from the wild nature of Bornholm or the Kadeaus fantastic kitchen garden in Vester Sømarken, and we ended up with a great mix. The aim was to ensure “a taste of Bornholm” and at the same time be in line with the Kadeau taste.

The second part of the process was hard for all of us, as we had to try and be patient and wait until spring and early summer, where we could start harvesting.

Hereafter the activities moved to the distillery, where testing commenced on a small pot still. We did more than 5 iterations, before moving to our main pot still. But even during the distillation on the main distillery pot, we refined the gin with a couple of adjustments, before reaching the final product. We ended up using ironwort, verbena, chervil, angelica root, agastache, spruce shots from scots pine, juniper and a few more.

The botanicals together with the spruce shots, makes it a fresh and herbaceous Gin – kind of Nordic you could say – and it should be enjoyed with a mild tonic.

This batch of Kadeau Gin is limited to less than 500 bottles, it will only be available in selected stores, at Kadeau Bornholm, and in our webshop.
