Honningsyp is aquavit sweetened with honey. It is a special tradition from Bornholm that has existed for many centuries. The sweet spirit is often served during Christmas lunch because it pairs well with the smoked and salty dishes that many people from Bornholm enjoy during the holiday season.
Each family has its own recipe for the perfect honningsyp. Should the aquavit have a taste of caraway or not? Should a lot or a little honey be used? What type of honey should it be? Should it be spiced with other flavourings? The variations are many.
Honningsyp from Bornholm Distillery
At Bornholm Distillery, we use only three ingredients in the production of honningsyp: aquavit, honey, and patience. The result is a beautiful golden honey snaps with a rounded flavour and a delicate sweetness. The mild taste is a perfect match for the annual Christmas lunch – and a really good alternative to the classic strong aquavit.
We sweeten our honningsyp with flavourful late summer honey, naturally supplied by local beekeepers. The honey is stirred in by hand. It takes time, but it yields the best results.
As a base in our honningsyp, we use our own aquavit. An aquavit that itself carries a »wild story«. It is spiced with an original caraway variety dating back to the 1800s. The variety was rediscovered – growing wild – on Bornholm in 2019 and differs from common caraway by being milder in taste, as well as having clear mint and anise notes.

Here at the distillery, our ambition is for you to be able to smell and taste Bornholm in all our products. In fact, you should preferably feel the soul of Bornholm when you open the bottle. This is especially true for our honningsyp, as we are right at the core here.
